Errupting Volcano Cake

We had a birthday party for Max on Saturday. Of course his party theme has changed MANY times over the past year. He finally decided on a Gormiti/Volcano theme. I did not have to work with fondant after all. Instead I adapted this Volcano cake recipe.

I used my own recipes for the cake and buttercream frosting. Instead of Marshmallow Fluff which contains egg I used Ricemellow Creme. Worked well.

Now we are headed out for vacation. Packing here I come.

Adam's birthday is coming up this month. Just yesterday I tested out a birthday cake recipe to check for any reactions. This week it's time to try out a frosting! Your volcano cake looks great!

Dear Fellow Mama of Children with Food Allergies,

God led me to your website today (01/01/10) when I googled "Lactic Acid Starter Culture". We are learning about lactic acid starter culture being milk-based as well as corn- or beet-based. I briefly looked through your post on "Epi-pen". Just wanted to share with you what God has taught us with our children; we have learned that you can "test" if they are still allergic by applying the oil, egg, nut butter, or dye on his/her arm and he/she will break out in hives on that area if they are still allergic. By practicing complete avoidance we have not had to use the Epi-pen yet. We have four children (ages 4-13). We are a homeschooling family and some of our children avoid cow's milk, goat's milk, tree nuts, peanut, egg, flaxseed, vanilla, red dye in foods and in modest swimmers. One of our sons had an asthma attack when we applied a drop of cow's milk on his arm. I was hoping to email you directly. BTW, if you are interested, I just informally wrote an allergy-free cookbook for our children to learn hands-on how to cook and bake with alternatives. God has blessed our family with food allergies. Because of our food allergices and intolerances, God has been teaching us for over 13 years about whole foods, reading labels, cooking, baking, and eating healthier. Praying for God's will for you...

Wow! This is great :) Our little guy also has allergies to nuts, eggs, dairy and sunflower! You are the first person I have found that also has a sunflower allergy. We arent actually sure if it was that or melon, but one of them caused him to have an anaphalaxis reaction. It is so scary.

He was actually unable to eat so many foods because they caused him to have terrible Eczema until we gave him Belly Boost probiotics. It was amazing that he got so much better.

Thanks for the Ricemellow Creme tip. I never heard of it and I've been searching for an egg-free marshmallow cream.
